Meet Eli Chilcon - High Altitude, High Quality!

This lot comes from La Montaña farm, a 4-hectare plot in El Diamante, Peru, run by Eli Chilcon and his family. Nestled at 1,800 meters above sea level, this farm is exclusively planted with Caturra, a coffee variety known for its bright and clean cup profile.

Climate & Farming Challenges Climate change is making farming at this altitude challenging, with unpredictable temperatures and frequent droughts. To combat this, Eli has planted shade trees and installed irrigation systems to protect his coffee plants and maintain soil health.

Fun fact: After picking, the coffee cherries are rested, pulped, then rested again for 48 hours before washing and drying for around 14 days. This careful process helps create the coffee’s distinctive flavors.

The Chilcon Family - A Coffee Legacy Eli is part of the Chilcon family, a name well known for producing top-quality coffees in northern Peru. Their farms, located in El Diamante, San Jose de Lourdes, sit above 1,800 meters amongst native forests, creating ideal conditions for slow-growing, flavorful beans.

  • The combination of high altitude, variety, and careful processing gives their coffees a fruity and citrusy profile.

  • Roger Chilcon, Eli’s relative, manages some of the family’s coffee operations and coordinates the wider community’s coffee production. He oversees harvesting, fermentation, and drying, using ventilated greenhouses and raised drying beds for slow, even drying over 2-3 weeks.

  • Post-Harvest Care: After drying, the coffee is delivered to Falcon’s warehouse in Jaén for quality assessment and price negotiation based on its cup score.
