This coffee comes to us from Roger Chilcon. Flores’ farm in the El Diamante village of San Jose de Lourdes, Cajamarcas, an area well known for its superb coffee growing conditions. Chilcon Flores farms 3 hectares of caturra, bourbon and pache trees, once ripe, cherries are harvested and fermented for 24-36 hours, lending the cup a pronounced fruit profile which is complemented by a gentle acidity and rich, smooth mouthfeel. The region of El Diamante is home to protected forests with a variety of flora and fauna native to the region, alongside several water sources which supply much of the water to the city of Jaén. As well as providing a beautiful and thriving natural environment to grow coffee, the biodiversity contributes to the richness and stability of the soils in the area. Expect smooth drinking, pronounced stone fruit sweetness, heritage tomato notes, and a gentle lime acidity.
