This season we’ve sourced 2 excellent coffees from the Izuba Washing Station in Burundi’s Kayanza province.
This special prep lot is all about bold, funky flavour. Cherry from the Runinya hillside, undergoes a technique pioneered by Miguel Fajardo Mendoza of Raw Material Coffee.
The term anoxic is used here to describe the conditions under which fermentation of the cherries takes place. To borrow a phrase from another industry we love, all fermentation is anaerobic, but not all anaerobic fermentations take place in oxygen free environments. An oxygen-free (anoxic) environment is created during extended fermentation, by sealing the container using water over a cover, hence the name, water pillow technique!
Expect big, juicy, boozy flavours in the cup, with a smooth, clean finish.
