Izuba means “sun” in Kirundi - a fitting name for a station that brings clarity and warmth into every cup.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAt Izuba, quality begins with careful hand-sorting of fresh cherry, followed by a pre-pulp float to remove underripes. After pulping, the parchment is fermented under water for around 12 hours, agitated several times to ensure even breakdown of mucilage. Post-fermentation, coffee moves through a serpentine grading channel, separating beans by density and cleansing the parchment with flowing water.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAfter a final post-wash rinse, the parchment is hand-sorted again and dried slowly over 15 to 20 days, turned regularly to ensure even drying. The result?
